Johnson & Wales’ new state-of-the-art culinary arts building in Providence, RI reflects the University’s status as one of the leading culinary educational institutions in the U.S. The 82,000 SF building contains numerous specialized food storage and preparation facilities, including 20 different food prep. labs, each specially equipped for such diverse hands-on culinary activities as chocolate making, pastry baking, brewing and wine tasting. The facility also includes 3 dining rooms, several walk -in coolers, food storage areas, and faculty offices.
Designed to attain LEED-NC Silver certification, the MEP/FP systems developed by RDK for the new building include such sustainable elements as storm water harvesting for toilet flushing and irrigation and VAV exhaust hoods in the kitchens. Energy modeling was also conducted to optimize energy performance.
